March 2004 – No O’s

Hello, retro food lovers! Today we are stepping back in time for a fun theme.  Remember the childhood book “Ghosts and Crows and Things With O’s?  Well, today is the opposite. My aim today was to create a menu where none of the recipes contain the letter O in its name.  Weird?  Yes but so is Omicronphobia which is a fear of the letter O.  Just in case you ever happen to be entertaining someone suffering from this affliction, here is a menu for you.  Also, please don’t tell them I called them weird!  Our guide today is the March 2004 issue of Delicious Magazine.

So, what else was happening in March 2004?  Well, a fire crew in a hurry to get to a fire in Melbourne Florida left a fryer on in the firehouse.  A little later they got a call to come and put out another fire…at their firehouse!  In popular culture, the Da Vinci code was still top of the best seller lists and The Passion of  The Christ was number 1 at the box office.  Yeah by Usher was the number one song.

Now, that we have set the scene, let’s get to the menu

Teriyaki Steak with Wasabi Mash

I loved this, it was my favourite dish on the menu and so easy to make as well.  I often found bought teriyake sauces much too sweet for my palate but this was perfect. And the wasabi mash was a perfect accompaniment.  I also served some edamame and pickled veg alongside.

Crème Brulée

March has been a very custard and caramel month around these parts.  Last week I made caramel custard and this week, its more sophisticated cousin, Crème Brulée.  I will say though that I cannot recommend this recipe.  For a start, the cooking time was completely out.  I had to cook my custards for about double the time they suggested! I was also intrigued by their suggestion of grinding the sugar to make it easier to torch.  It did not. All it did was add to the time taken to cook the recipe, and burn the sugar when I torched it.  After the first two, I went back to my usual way of using normal caster sugar and it was fine.  Just listen to this.  This is the sound of a good Crème Brulée.

It was a bit of a dud but I am including it for compleness sake.  And having said that, the custard was delicious.  And once I reverted back to my usual non-powdered white sugar, the bruleed top became perfect!

My Nigella Moment  – Blue Cheese, Honey and Walnuts

For first-time readers, this refers to the moment at the end of Nigella Lawson’s cooking shows when she sneaks back to the fridge to have another bite of something delicious.  In these Twenty Years Ago posts, it is something contained in the magazine that does not fit with the overall menu theme but I’m sneaking it in because it is too good not to share.  

I have long said that cheese is my love language so this recipe immediately called to me.  So simple and so delcious.  And if you wanted to bring this recipe up to date?  Sub out ordinary honey for some hot honey.  This is a perfect after-dinner cheeseboard for one, or many.  I served mine with  a green salad and a croissant for a delicious lunch.  This recipe is proof that the simple things in life are often the best!

October 2003 – The White Menu

Hello retro food lovers and welcome to October 2003 where today I am using Delicious magazine to create a white menu.  White food has the double reputation of being 1) boring and 2) overly processed so my aim with this menu was to try to combat both of those.  But first, let’s take a look at what was happening in pop-culture in October 2003.  

School of Rock was #1 at the box office and The Five People You Meet In Heaven was the best-selling book.  Number 1 on the pop charts was Where Is The Love by The Black Eyed Peas.  Two weeks earlier it was White Flag by Dido which would have fit in perfectly with this menu!  Let’s hope I won’t have to wave a white flag with my menu!

Now I also realise that this view of my cheesecake is not white, however it just looked so good, I couldn’t resist sharing it!

Mozzarella and Grilled Chilli Salad

This was AMAZING!  So tasty and the perfect way to kick off a meal!  I loved the simplicity/minimalism of this Jamie Oliver recipe.  It also not only looked beautiful on the plate but tasted divine!  Another recipe from this same article, a squid and cannellini bean salad nearly made the cut for the main dish in the menu and is something I am still very keen to try!

Fish Stew With Lemongrass and Lime

This is an Ainsley Harriott recipe and was also divine!  It was light and refreshing and, as he says in his intro, very different from the usual tomato-based fish stews.  Like the  mozzarella starter, this would be a perfect summer meal.

Low Fat Cheesecake

I felt bad that I could not deliver a cheesecake for the Birthday Party, Cheesecake, Jelly Bean, Boom!  menu.  Because I LOVE cheesecake!  So I was delighted to find one in this issue of Delicious.  And this was a beauty too.  It’s a pretty classic baked cheesecake.  Even though it is low fat, it feels  rich,  The rest of this menu is light though so this seemingly decadent dessert won’t weigh you down too much!

My Nigella Moment  – Beef with Lavender Mustard

For first-time readers, this refers to the moment at the end of Nigella Lawson’s cooking shows when she sneaks back to the fridge to have another bite of something delicious.  In the context of these Twenty Years Ago posts, it is something contained in the magazine that does not fit with the overall menu theme but I’m sneaking it in either because I made it and it was really good, or I just didn’t have time to make it but it was one of the most appetising things in the mag!

OMG, this beef just melted in my mouth!  And if you’re thinking you don’t have any Lavender Mustard, come back next week.  I’ll have a little treat for you.  I added a spoonful of honey to my Lavender Mustard to give the required sweetness to this.   Also, I misread the ingredients and I bought a rump roast and not rump steak for my version.  I seared the meat as per the recipe and then roasted it until it reached 72C / 165F on my meat thermometer.

Well, Delicious Magazine from October 2003 really came through with a delicious white-themed menu for me!  Certainly no Didoesque white flag moments for me!

At the best of times, a cheesecake (or really any item of food) hailing from “Ye Olde Crusty cellar”  would not sound tempting.  However, these are not the best of times, (these may well be the worse of times) and desperate times call for cheesecake!  Have I ever mentioned how much I love cheesecake?  Next to ice cream, it is probably my favourite dessert.  Also, Fridge, Freezer, Pantry week has come around again and I had half a tub of cream cheese icing I wanted to use up. I did not want to make another cake with cream cheese icing so I thought I could hide it in plain sight as it were by mixing it with more cream cheese, sugar and lemon.

The recipe for Ye Old Crusty Cellar’s Cheesecake came from the book 100 Fabulous Cheesecakes by Ellen Sinclair of The Australian Woman’s Weekly (1971). It is a real shame about the name because the Ye Olde Crusty Cellar cheesecake itself is delicious!!!

I did not copy the recipe for Ye Olde Crusty Cellar Cheesecake exactly though.  I changed a few things to suit my personal taste.  You can decide if you make this whether to follow the OG version or mine.  Here is the original with my notes on the crumb crust.

Here are the instructions on what to do with those ingredients to turn them into a crumb crust:

The two changes I made to this were:

  • I did not add any additional sugar as I thought an entire can of condensed milk would be sweet enough
  • I did not add the egg yolks.  Largely because I could not understand what they were doing there.  I totally understand eggs in a baked cheesecake but not in an unbaked.  The only thing I could think that they provided was maybe an additional richness to the mix.  Again, for my taste, cream cheese and sour cream are rich enough.

I was a bit worried that leaving them out would somehow mean that the cheesecake would not set.  But the mixture firmed up beautifully in the fridge overnight to cream a filling that was both light, luscious and not too sweet!

Ye Olde Crusty Cellar – History

The Ye Olde Crusty Cellar was a wine bar opened at 255 George Street brSydney in 1931 by winemaker Leo Buring.

It was described as having:

“the head of Bacchus…to guide guests in and out’ with ‘shaded lights’ and a feeling of ‘cloistered gloom’.

Hmm, not sure cloistered gloom would be the ambiance I would be seeking were I to open a wine bar. But it worked for Leo!  The “Crusty” was a destination venue, attracting crowds of visitors, many of whom would have sampled the cheesecake!

Sadly the “Crusty” closed in 1974 but luckily the recipe for us, it’s signature cheesecake lives on!

Honey, I Shrunk the Pies!

Happy Pieathalon People of the internet!  Yep, it’s that special time of year when a group of bloggers get together and bake the good, the bad and the ugly of vintage pies!  It’s also my birthday week  so it’s double the celebrations for me!  Pie and champagne!  Life, my friends, is good indeed!😍

Let’s get down to it, shall we?

The Pie

Pie choice day is always exciting.  What will that email from Yinzerella reveal?  There is always a slight worry in the excitement –  I am happy to have an odd pie – but not too odd.  One of my favourite parts of Pieathalon is that I get to eat a pie so I always give a little silent prayer.  “Please do not let this contain anything disgusting like offal or beetroot.  Or sugary onions.”   Speaking of the sugary onions, my recipe came from The Nostalgic Cook who sent Jenny the Sweet Onion Pie recipe last year!  Honey Cream Cheese Pie 4

Luckily the Gods, (and Kari and Yinzerella) smiled down on me.  The pie I received was a gorgeous sounding Honey Cream Cheese Pie from Sunset’s New Kitchen Cabinet Cookbook from 1938.  It is described as a “not-quite-so rich version of the very rich German Cheesecake.  This Honey Cream Cheese Pie will be welcomed by everyone”.  It was more than welcomed by me.     I had most of the ingredients which is important when you are leaving the country for a month!  I did not want to buy things only to have to throw away any leftovers because we were going away!

This book looks great.  I love the little cartoony insets.  The recipe page also had a v cute cartoon for a less than appealing sounding carrot mould.

Speaking of which…remember a  few Pieathalons ago, when I made the Lime Jello Pie?  I totally forgot that I had moved it to the fridge in the garage so the housesitters could use the main fridge.  When I opened the garage fridge about a week after we got home, it was like I had just put it in there.  It had not changed one iota in the month it had been in there.

The Song

Every year I get a song stuck in my head at Pieathalon time.  For my first Pieathalon it was Waterloo by Abba. For the lime jello pie I went a bit hair-metal and subbed in the words “Lime Jello Pie” into “Sweet Cherry Pie”

There were two contenders this year.  The first was, of course “Sugar Pie Honey  Bunch” by the Four Tops.  But nah, too obvious.  The song that stuck was  “Honey Child, what can I do?” by The Ballad of The Broken Seas.  Which became Honey Pie what can I do?  Which then morphed into….no, we’ll get to that…

Ch…ch…changes

The recipe for the pie says that it is big!  Enough for 8 which was way too big given our impending departure.  There were three eggs in the original recipe and everything else was easily divisible by three so I decided to make a  third of the original recipe.  And also that small pies were going to be easier to distribute out if we didn’t eat them all.  It might be weird to give the neighbours who are picking up our mail a half-eaten pie.  But I think, perfectly acceptable to give them a few freshly baked tartlets as a pre-emptive thank you.

The Bake aka Honey Pie what did I do?

I baked my pies on Saturday afternoon where there was a LOT happening.  We were still booking some accommodation so there was stuff happening on the internet, there were phone calls, there was washing and packing and I don’t know just a lot of things going on.  I was also obsessing about the nutmeg.  Personally, I don’t like it so was trying to decide if I used it on all of the pies, or none or some.

But the making of the pies went perfectly.  There was enough mixture for the 6 small pies and some leftover. I had a little taste of the raw filling, it was really good!!!  I nutmegged three of the six tarts, popped them in the oven and went to hang out the washing.

When I came back inside I noticed a jug of milk on the bench.  And realised that I had totally left the milk out of the recipe!!!!

It was too late to do anything about it. I briefly contemplated pulling the pies out of the oven, scraping out the filling, adding the milk and refilling them but they were already a little bit too set for that.

So, there was nothing to do but to sit and wait to see how these milkless tarts would turn out.

My song quickly became “Honey pies what did I do?”

The Verdict

The honey cream cheese pies looked so gorgeous when they came out of the oven, gorgeous golden domes.  The smell of the baking was divine.  And they tasted delicious!

We had one each while they were still warm from the oven and they were like a cross between a cheesecake and a Portuguese tart.  So tasty.

I don’t know what the milk would have done to these but they were so good without it that I will not add it in when I make these again, which I will definitely do!

We had no leftovers to give neighbours or anyone else!  I ate the last one the following night as we waited for the Uber to take us to the airport.  With a little glass of sparkling wine, it was the perfect end to Pieathalon 2019 and the start of the holiday!

Stuff and Nonsense – March 2015

No retro food today just a random collection of what I’m doing and loving at the moment. I love it when other bloggers do this so I thought I might give it a go. The title for this is inspired by this gorgeous song by Missy Higgins, covering an old Split Enz song which I have just rediscovered on my ipod.

Stuff I’m Reading

I joined a book club!!!  Our book of the month is Us by David Nicholls. I am so excited to read this.  I loved his last book, One Day.  Also a bit scared about the whole book club thing.  First meeting next Monday!

 

I have just finished reading this which I loved.  This was one of those books where I just wished I had had the idea to do it.  This was so funny although it did get a bit repetitive at times but this may have been because I read it in pretty much a day.  And like most diets, it left me wanting more!
