Goodness, Gracious, Great Balls of Rice? (Daring Kitchen Arancini)

Ever made food where just looking at it made you feel happy?

That’s how I felt with the December Daring Kitchen Challenge.  Just looking at these golden balls of goodness made me smile.

Yes, I did just say golden balls of goodness, and yes, I did have a little smirk as I did.

Sigh.

I so have the mind of a 12-year-old boy.  And you know what?  This whole post is full of stuff like that.

So, you know, take a moment….watch this clip from a British tv show called, I kid you not,  Golden Balls, which appears to be a game show version of the Prisoner’s dilemma.   (Yay, I knew that Philosophy major would come in handy one day!  Stay tuned, next week…Baking with Nietzsche…)

Anyway, marvel at the British nuttiness of it all and come back ready to talk about arancini….

Ok, I’m ready.  Arancini.

January’s Daring Cooks’ challenge was a ball! The lovely Manu from Manu’s Menu brought our taste buds to the streets of Sicily and taught us her family tradition of making arancine – filled and fried balls of risotto. Delizioso!

These were super delizioso but believe me, you’re not making them in any sort of hurry.  These babies need some time and devotion to the cause.

First you’ve got to make:

I’ll put the full recipe at the end.  but this is actually a great risotto recipe.

What you end up with is this.  How gorgeous is this bright yellow?

This lovely sunshiney yellow is well on its way to becoming my favourite colour. And mmmmm…butter….

Then you lay it into a tray to cool and then you make…

And you know what?  You could stop right here and crumb these babies and they would be all kinds of delicious.  But in the daring kitchen, we’re turning that flavour experience up to 11.  Yeah.  EL-EV-EN.

Starting With:

The Bechamel

Wow.  has there ever been a bigger moment of cognitive dissonance?

Did you all just fist pump the air Eye of the Tiger style and then do a double take?

Bechamel?  WTF?  BlecHHHHHamel  more like.  Isn’t that the creepy white sauce that tastes like glue?

Bear with me..this one’s good.

You need to make it quite thick.

And finally:

The Filling

I chose to do a spinach and mozzarella filling.  The recipe has a meat ragu version and  a cheese version.

I didn’t get  a photo of the sauteed spinach.

But it looked like sauteed spinach.

You make a hole in the Risotto ball and add the filling ingredients – sauce, cheese, spinach.

And close.

Word to the wise.  Do the sauce first.  I’ll show you what happens in a moment if you try to do the sauce last…

See what I mean about this being a labour of love?

It’s not all over yet folks, now you gotta egg them, crumb them and fry them up.

Bet you’re thinking you can sit down and have a quiet bottle of vino and some valium  now aren’t you?

Not so fast, Speedy.  These are fabulous and you could quite easily eat them as is.  Look at that oozy goodness….

Yep, oozy goodness from my golden balls…don’t roll your eyes…you were warned.

But remember when i said we were taking this up to eleven?

For eleven you need my spicy tomato relish (recipe below)

The arancini have a delightful crunch, then the aromatic risotto and the creamy cheesey garlicy goodness of the filling. The relish brings some heat and some tanginess. And that my friends is the five food groups covered.

Plus it has spinach so it’s good for you.

Like I said.  Eleven.

Belle & Sebastian’s Plum & Feta Salad

ARGGGHHHH….

I can’t believe it is almost time to go back to work.  Where did the summer holidays go?  Actually, the whole of summer was M.I A.  I wore winter boots the other day.  We’re living in crazy times….

But maybe because the réntrée, as the French would say, is about to commence I have had a particular song stuck in my head for about the last four days now.  Luckily, this was one I could tolerate, unlike the last time which was Rooms Are On Fire by Stevie Nicks.  Can you imagine 6 days of “There is magic all around you, if I do say so myself…”?

Ever wanted to bang your head into a wall just to MAKE IT STOP?  That’s what that week was like.

This time is the fabulous Step Into My Office Baby by Belle and Sebastian. Who I love with an almost unrivalled deep and deadly…They’re clever and funny and named after a French book from the 1960’s. They have great album covers and witty whimsical lyrics…

Smart, funny, savvy, slightly nostalgic for a past that probably actually existed…If I was a band I’m almost sure I would be  Belle and Sebastian.

Even though this says I am Coldplay!

And, as if all of that musical talent wasn’t enough, they’re also creators of a super refreshing salad!

I found this recipe in “Lost in The SuperMarket: An Indie Rock Cookbook “by Kay Bozick Owens and Lynn Owens and have been waiting for plums to come into season ever since.  And those happy days have finally arrived. The shops are full of them.

As a complete digression…they are also full of hot cross buns.  WTF is wrong with people?  It’s JANUARY!!!.  Ok, don’t even get me started…here’s the book….

 

And here is more of the Belle & Sebastian Plum & Feta Salad!  Tangy from the plums, salty from the feta, sweet from the honey, fresh from the mint….and just look at the fabulous colours…

I had mine with a very simple grilled salmon steak and it was a match made in heaven!!! The tanginess and saltiness of the salad cut through the richness of the salmon perfectly.

But I think the Belle and Sebastian Plum and Feta Salad would also go really well with chicken or pork and it would be super wicked amazing with duck….

I’ll give you another B&S anecdote just for free…for YEARS, I thought their gorgeous song Piazza, New York Catcher was called PIzza, New York Catcher….food obsessed or what?

So here are my tips to make the réntrée more bearable:

1. Make this salad….it will cheer you up

2. Listen to some Belle & Sebastian… here’s some I prepared earlier…

3. Don’t look up “The Boy With The Arab Strap” at work thinking you will just get the Belle and Seb album cover.  You won’t.  And some of the images you will get will be definitely NSFW. Not to mention unsavoury.

Lending a Hand – Hangover Eggs

Now that I have more storage space, mum has been bringing over various bits and pieces of my childhood that she had been keeping for me.

This included a whole heap of my books, including all of my old Famous Five Books.  OMG, I loved these,  I must have read each of them a hundred times!  And yes, at some point I will do a post on the food of the Famous Five.  And it will have lashings of ginger beer.

She also brought over my old Brownie Uniform.

Even better than the uniform  was, that, in the pocket was my Brownie notebook and official brownie pencil emblazoned with the Brownie Motto of “Lend a Hand.”

On the first page of the notebook there is a note about a recipe with a big tick next to it.  I started this cooking thing young!   On the second page is a cryptic note saying “Next week jeans + t-shirt not to wear”  I wonder what the hell we were going to do with them…Sadly the rest of the notebook is blank so we’ll never know.

As New Year’s Eve is looming, I thought that in the spirit of “lending a hand” I would share my recipe for Hangover Eggs.  And, all you party revellers can “be prepared” and get in some supplies.  I can’t remember where I found this recipe originally but over the years, it has morphed into the recipe below.

It is however very flexible. You can  add tomatoes to the toast; mushrooms,  fresh chilli, or green or red pepper, or anything else you fancy to the egg mix.  I also find most bought hummus does not have enough tahini in it and I’m far to lazy to make my own so, as per the recipe, I tend to add a bit.  You can do this, use the hummus as is, or leave  it out altogether. It’s your raging hangover, you know what’s going to work best for you!

Oh and this is really too good to be saved just for hangover days, I would eat it every day if I could!

For the healthy, you can wash this down with some green tea maybe with the rest of the lemon juice squeezed in.

For the rest of us, an ice cold coke is the perfect beverage.

For the truly suffering, a small glass of champagne just to top up your levels may be in order!

Retro Food In the News – Vintage Christmas Ideas

I read an article called Have Yourself a Very Vintage Christmas today.  (It is no longer online so I have removed the link.

The Pita Bread Christmas Trees mentioned in the article  are adorable.  And, will be featuring in my Christmas menus.

However, if you are going down that route you could also try this very pretty version from Betty Crocker.  You really know you’re taking a ride on the way-back machine when you have a completely gratuitous use of food colouring!

Let’s See How Far We’ve Come – Cheesy Meaty Goodness On a Stick – 1970’s vs 2010’s

My favorite thing to eat is finger food.  And it doesn’t have to be fancy – I’m just as happy with a mini-quiche or a party pie as with a teeny Peking duck pancake or a tempura prawn on a stick with wasabi mayo.

If I was ever going to open a restaurant, all it would serve would be tiny bites.  And champagne.  Cocktails of course.  But the entire menu would be finger food.  It would be a cocktail party restaurant.  Anyone wishing to fund this establishment…you know where to find me.

Finger food has been on my mind recently as I have been drooling over the contents of Lydia France’s Party Bites which is like setting a child loose in a sweet shop – I want that one!  And that one!  And I REALLY want that one!

I was also not the only one who thought this book was looked delicious.  Oscar’s been suffering from a little bit of separation anxiety since I have gone back to work and I came home one day to find the book, which I had left on the couch was not exactly how I had left it….

I then had to go fess up to the library – the upside of which, after exchange of some financial compensation, the book, albeit slightly chewed now belongs to me!

There is a recipe in Party Bites which is a modern take on the old retro favourite of a cube of cheese on a stick with a bit of something.  This is often to be had with pineapple in the fabulously kitschy Cheese and Pineapple Hedgehog:

 

Then there is the equally retro but less whimsical Aussie Staple of kabana and cheese….

No Australian barbeque of the 1970’s or 80’s would have been complete without a tray of this.  Often,  the kabana and cheese was topped with  chunk of pineapple, a gaudily coloured cocktail onion or, if you were really classy, a stuffed olive.

The idea is actually sound.  Who doesn’t love a meaty cheesy snack?  And if topped with something sweet or sour or salty…well, so much the better.  We here at Retro Food For Modern Times are not subscribers to the minimalist maxim that less is more.  We believe that more is more.  With a cherry on top!

The main problems with kabana and cheese is that kabana is kind of gross and although this combination might be tasty, it is drop dead boring. So, how do you give the ubiquitous kabana and cheese a modern twist whilst still retaining some of the kookiness of the cheese and pineapple hedgehog?  Hello Lydia France’s Spanish Men…or should that be Hola los hombres españoles!

And here are mine…my Spanish men look a little drunk and definitely more chunkier.  I think my Spanish men may have been hitting the Rioja a little too hard….

For all their wonkiness, I loved them.  These were sooooo good!  Serrano ham, where have you been all my life?  If you weren’t so damn expensive I would be feasting on you non-stop.

The salty olive, the sweet quince paste, the meaty deliciousness of the serrano and the creaminess of the cheese combine to create a little piece of heaven on a stick!
